So we all survived the snow storm that hit the east coast yesterday. The streets may be clear but it's still cold out which means it's an ideal day to bake...
Chocolate and banana is one of my favorite flavor combinations of all time. Growing up my go-to birthday cake was always plain yellow cake with whipped cream and mashed up bananas in between the layers, and chocolate glaze on top. Since most of us don't want to make a full layered cake very often this frosted banana loaf is a lot easier for everyday celebrations. Should you choose to make the cake part without the frosting and serve it as banana bread you can add nuts (included as an option in the recipe) or chopped chocolate or chocolate chips (use the same amount as the nuts and add at the same point in the recipe)!
Banana Cake with Milk Chocolate Frosting
Makes 1 loaf-size cake
For the cake:
- 1/4 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 very ripe bananas
- 1 1/2 cups all-purpose flour
- 1/2 cup hazelnuts (optional)
For the frosting:
- 1/2 cup (1 stick) butter, softened
- 1 1/2 cups confectioner's sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 3 tablespoons whole milk
- 1 banana, sliced (optional)
Preheat oven to 350F.
In the bowl of the stand mixer, beat together butter and sugar until light and fluffy. Mix in eggs and vanilla until well incorporated. Beat in bananas. Slowly add flour until combined but still lumpy. Stir in nuts.
Pour batter into a greased and floured loaf pan. Bake until lightly browned, the edges pull away from the pan, and a toothpick inserted into the middle comes out clean, about 50 minutes. Cool in pan 5 minutes before removing. Cool completely on a wire rack. You can leave the cake plain without frosting and eat it more as a dense banana bread.
If you're frosting the cake instead of serving it as a loaf, beat the butter until soft in a stand mixer or using a handheld mixer. Beat in sugar, cocoa, and salt until completely combined. Carefully whisk in milk.
When cake is completely cooled, frost with milk chocolate frosting and top with banana slices.
