Anyone who knows me knows that I hate green juice. If I'm going to have a salad, I'd prefer to chew it - if you ever see me at a Juice Press, you can bet I'm ordering the all-fruit item on the menu. But I happened to have a lot of leftover baby spinach that was starting to wilt and my new year's resolution is to live a more sustainable life. Meaning, I'm trying not to let food go to waste (among other things) and needed to do something with said spinach. To solve my problem without eating a salad for breakfast, lunch, and dinner, I made myself this green smoothie! The bonus is that it's full of vitamins to keep me going during these cold winter months.
- Juice of 2 naval oranges
- 2 kiwis, peeled and cut into 1/2-inch pieces
- 1 frozen banana, sliced (Peel them before you freeze 'em!)
- 1 packed cup baby spinach
- 8 ice cubes
Add all ingredients to the jar of a blender. Blend until smooth. Pour into 2 glasses and serve with straws.
